Well I'll throw one in the mix I don't think anyone has mentioned yet.
I use Sony Sound Forge. Records well. You can cut, edit, mix. It's a pretty good program!

I guess I was REALLY lucky. I took a Sound Mixing class last year and got an old version of Steinberg Nuendo and it works perfectly for recording, editing and mixing. It's a bit expansive, though (as I said, I was lucky).
I've recently been using Ardour, a (sometimes) free DAW. I haven't dug too deep, though. Before that I just used GarageBand and exported the uncompressed audio from it. I used to have an old copy of Logic, but it doesn't work now that Apple has removed Rosetta. I also have the adobe master suite. I've played around with Audition, but haven't dug into SoundBooth. It seems a bit counterintuitive compared to Audition.

I mainly use Adobe Audition for audio-editing, recording, cutting etc etc, but often I'll use Sony Vegas for fandubbing and editing too.
At home, I record and cut with Audacity; because, you know, it's free. Sometimes I use Cool Edit Pro for effects and whatnot. When I'm up at the studio, I use Soundtrack Pro.
Currently using the newest Audition, 6? I'm pretty sure.
I've recently acquired Pro Tools with an interface that I bought, and I might dab into it to see what it's like.
I record and do basic editing (cleaning up background noise, normalizing recording, etc) with Audacity. If I need any other effects, I use Sony ACID Music Studio 8 and, on occasion, Adobe Soundbooth CS5. (Although I rarely use the latter...I NEED to upgrade it to Audition. ;w; )
