I gotta say, after having gotten hooked on Naruto lately, I'm currently digging the soundtrack everywhere I go. Just makes me think of better things =)

Aside from that, I've always held a place for the Evangelion music, as that was one of the first series I got into properly with anime. A lot of nice classical touches that really bring back memories.

Oh, but one more would be anything by Yoko Kanno, of course. The Stand Alone Complex and Cowboy Bebop soundtracks are superb.
